It’s Memorial Day weekend and we’re taking a little break, but fear not! Here’s a little something special for you. In the next episode we’re talking about nutrition, so here is a recipe of one of my favorite dishes, Quinoa Pancakes. The recipe calls for it to be topped with salsa (which I love at lunch), but I’m adding an egg to mine since it’s breakfast time.
